Sisters Cheater Aioli

Ingredients:

5 cloves garlic, finely grated or minced

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 1 teaspoon Dijon mustard

  • 1 cup mayonnaise

  • 1 Tablespoon fresh herbs (I like chives or thyme from my garden)

  • Salt and pepper to taste

How to prepare

  • Stir 5 finely grated garlic cloves, 1 tablespoon of the lemon juice, and 1/2 teaspoon Dijon mustard together in a small bowl until combined. Let sit for 15 minutes for the flavors to mix.

  • Whisk in 3/4 cup mayonnaise and fresh herbs until smooth. Taste and adjust seasoning with salt and pepper or up to 1 tablespoon more lemon juice as needed.

  • How to Use:

  • I like to use half of the aioli on top of a spatchcock cut chicken before roasting, then use the other half as a dipping sauce.

Variations:

  • Add additional flavors: paprika or favorite fresh herbs.

  • Stir in finely chopped capers, pickles, or pickled peppers.

  • Use lime juice instead of lemon
