Sisters Cheater Aioli
Ingredients:
5 cloves garlic, finely grated or minced
Zest of 1 lemon
Juice of 1 lemon
1 teaspoon Dijon mustard
1 cup mayonnaise
1 Tablespoon fresh herbs (I like chives or thyme from my garden)
Salt and pepper to taste
How to prepare
Stir 5 finely grated garlic cloves, 1 tablespoon of the lemon juice, and 1/2 teaspoon Dijon mustard together in a small bowl until combined. Let sit for 15 minutes for the flavors to mix.
Whisk in 3/4 cup mayonnaise and fresh herbs until smooth. Taste and adjust seasoning with salt and pepper or up to 1 tablespoon more lemon juice as needed.
How to Use:
I like to use half of the aioli on top of a spatchcock cut chicken before roasting, then use the other half as a dipping sauce.
Variations:
Add additional flavors: paprika or favorite fresh herbs.
Stir in finely chopped capers, pickles, or pickled peppers.
Use lime juice instead of lemon
