Grilled Whole Chicken

Many times, people of scared of the "whole chicken," but it is my favorite way to prepare a meal. The easiest way to grill a whole chicken is just tossed on the grill. A little butter and some seasoning, and you're ready to cook. There is no real secret. This recipe depends on indirect cooking. The chicken is cooked in an area of the grill with no heat under it while the other burners are turned on. You will want the indirect cooking in the 350° to 400° range on the grill surface. Never depend on a thermometer in a grill hood.

Grilled Whole Chicken Recipe

4-6 people

Estimated cooking time: 100 minutes

Ingredients:

  • One medium Three Sisters Ranch whole chicken

  • melted real butter

  • Favorite seasoning mix of choice or use the below

Favorite Seasoning Mix

  • 7 tsp sea salt (I use Redmond Salt)

  • 2 tsp pepper

  • 2 tsp garlic powder

  • 1 tsp paprika

How to Cook:

  1. Start with setting up your grill for indirect cooking. Clean and oil the grates. Turn the burners that will be on to full and watch grill surface temperature. Aim for 350° to 400°. Adjust the burners as needed.

  2. Pat the chicken dry and tie up the legs. Brush about 2 tablespoons butter all over the chicken and sprinkle about 3 teaspoons of seasoning and rub on the skin of the chicken.

  3. Place on the grill with indirect heat, angling one thigh and the leg to the direct heat side. Close the lid, and don't touch for 50 minutes.

  4. Rotate the bird, angling the other thigh towards the heat. Give it a brush of butter and continue grilling until the internal temperature of the breast is 165°, about another 50 minutes.

  5. Allow to rest for 5-10 minutes before serving.

  6. Save the bones for bone broth.
