Greek Chicken Meatball Bowl
Ingredients:
- 1 pound Three SIsters Ranch ground chicken
- 2 eggs
- 1/3 cup breadcrumbs
- 1/2 cup crumbled feta
- 1 handful of fresh spinach, finely chopped
- sea salt, garlic powder, and fresh parsley to taste
How to Cook:
Preheat the oven to 350 F and prepare a baking sheet. Add everything to a bowl and combine using your hands. Roll into balls, place on the baking sheet with parchment paper, and bake for 18-20 min (flipping halfway) or until golden brown and the cheese starts to melt out slightly.
I paired mine with orzo, a fresh greek salad (Greens, lemon juice, cucumbers, chopped tomato, chopped red onion, olives, more feta), and a dollop of hummus and Tzatziki.
